I love the idea of mug cakes and brownies–a single serving that satisfies a sweet tooth but doesn’t leave leftovers to taunt you all week. 🙂 Why not apply the same idea and try a delicious mug apple pie? It comes together quickly and bursts with sweet and tart flavors.

What types of apples work best in a mug apple pie?

  • Honeycrisp – Sweet, slightly tart, and stays a little firm.
  • Granny Smith – Tart and holds up well (but you might want to add a bit more sugar).
  • Fuji – Very sweet and juicy, softens well.
  • Gala – Mildly sweet and tender, a good all-around choice.
  • Braeburn – Balanced sweetness and tartness, with a nice texture.

I tend to use Granny Smith apples for baking, but I don’t always keep them on hand. I buy Honeycrisp and Fuji most often, so those are what I would likely grab for a quick treat like this.

Mug apple pie ingredients:

  • 1 medium apple, peeled, cored, and diced (about 1 cup)
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon pure vanilla extract
  • 1 tablespoon water
  • 1 tablespoon butter, melted
  • 2 tablespoons all-purpose flour
  • 1 tablespoon oatmeal (dry)
  • 1 tablespoon sugar
  • Pinch of salt

Instructions:

In a microwave-safe mug, mix the apple, brown sugar, cinnamon, vanilla, and water. Microwave on high for about 1 1/2 minutes, until the apples soften. In a separate small bowl, mix the flour, oats, sugar, melted butter, and a pinch of salt to make a quick crumb topping. Sprinkle the crumb topping over the apples in the mug. Microwave for another 30 seconds, until warm and bubbly. Stir, let it cool briefly, and then top with whipped cream or a scoop of vanilla ice cream. Enjoy!

Notes

  • Use your favorite baking apple, such as Granny Smith, Gala, Fuji, Honeycrisp, or Braeburn. Adjust the amount of sugar to your preferences and to allow for the varying levels of sweetness of the different types of apples.
  • I’ve written the recipe for unsalted butter because that is what I typically buy. If you have salted butter, just omit the pinch of salt.

I almost always have all of these mug apple pie ingredients on hand, so this is a great way to satisfy my sweet tooth.
