Ingredients

  • 1 medium apple, peeled, cored, and diced (about 1 cup)
  • 1 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp pure vanilla extract
  • t tbsp water
  • 1 tbsp unsalted butter, melted
  • 2 tbsp all-purpose flour
  • 1 tbsp oatmeal (dry)
  • 1 tbsp sugar
  • 1 pinch salt

Method

  1. In a microwave-safe mug, mix the apple, brown sugar, cinnamon, vanilla, and water. Microwave on high for about 1 1/2 minutes, until the apples soften.
  2. In a separate small bowl, mix the flour, oats, sugar, melted butter, and a pinch of salt to make a quick crumb topping. Sprinkle the crumb topping over the apples in the mug. Microwave for another 30 seconds, until warm and bubbly.
  3. Stir, let it cool briefly, and then top with whipped cream or a scoop of vanilla ice cream. Enjoy!

Notes

  • Use your favorite baking apple, such as Granny Smith, Gala, Fuji, Honeycrisp, or Braeburn. Adjust the amount of sugar to your preferences and to allow for the varying levels of sweetness of the different types of apples.
  • I've written the recipe for unsalted butter because that is what I typically buy. If you have salted butter, just omit the pinch of salt.
