What could be better than a quick and easy recipe for a favorite treat in a convenient single-serving size? WIth just a few simple steps, you can have a mug cheesecake with a yummy custard flavor. Customize with your favorite toppings for a sure-fire hit!

Ingredients
  

  • 2 graham crackers, crushed
  • 2 tsp butter, melted
  • 3 oz cream cheese, softened (about 1/4 cup)
  • 1 egg
  • 2 tbsp sugar
  • 1/4 tsp pure vanilla extract
Optional toppings: fresh fruit, jam, mini chocolate chips, lemon zest, caramel drizzle, etc.

Method
 

  1. In a microwave-safe mug, mix the crushed graham crackers and melted butter. Press this mixture into the bottom of the mug to make the crust.
  2. In a small bowl, whisk together the cream cheese, egg, sugar, and vanilla until smooth. Pour the cheesecake mixture over the crust in the mug.
  3. Microwave on 50% power for 90 seconds to 2 minutes, checking after 90 seconds. You want the center to be mostly set.
  4. Let it cool slightly, then refrigerate for about 30 minutes (if you can wait!) before eating. Add your favorite toppings if desired.

Notes

  • If you prefer to use reduced fat graham crackers or cream cheese, that should be fine.
  • The crust will be fairly thick because I love that part! Cut in half if desired.
