Method
- In a microwave-safe mug, mix the crushed graham crackers and melted butter. Press this mixture into the bottom of the mug to make the crust.
- In a small bowl, whisk together the cream cheese, egg, sugar, and vanilla until smooth. Pour the cheesecake mixture over the crust in the mug.
- Microwave on 50% power for 90 seconds to 2 minutes, checking after 90 seconds. You want the center to be mostly set.
- Let it cool slightly, then refrigerate for about 30 minutes (if you can wait!) before eating. Add your favorite toppings if desired.
Notes
- If you prefer to use reduced fat graham crackers or cream cheese, that should be fine.
- The crust will be fairly thick because I love that part! Cut in half if desired.
